做(zuò )法(fǎ ):春(chūn )笋(sǔn )切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。 -
