做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一(yī )小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六成热(rè )下(xià )鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水(shuǐ ),放(fàng )入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即可(kě )品尝。 -
